Basic Knife Skills

One of the most common mistakes people make when using their chef knife, concerns simply the way they hold it.  If you hold it with the handle in your hand but your index finger is on top of the spine (back of the blade) you’re doing it wrong.   I was “that guy” for many years.

The correct way to hold a chef knife is to hold it comfortably in your hand of course, but your thumb and index finger should be holding the blade at the same time.  This way you have better control over the knife.  If you place your index finger on the spine and you put any pressure on the knife, it could “tip over,” so to speak.  You could be putting sufficient pressure on it that if your index finger is high up on the back of the blade (as compared to if it was holding the near the centre of the blade) you could actually push it over, rather than it staying vertical.  That’s one way you can cut yourself, badly.

If you’re not used to holding your knife the “proper way” just give it some time.  Before long you’ll wonder how you ever did it the “wrong way.”
